BBQ pulled pork 

Costco had a great deal on pork roast the other day, it was $1.69/lb and I bought apx 6 lbs. We love BBQ pulled pork, and I also love that I can freeze the extra for quick meals!

BBQ pulled pork is really an easy meal that doesn’t take much prep time, and you really just set your slow cooker and forget it for most of the day.

I start with my BBQ rub mixture that I always have handy in my spice cabinet…

           Stef’s BBQ rub:

  • 1/2 cup dark brown sugar
  • 1/4 cup smoked paprika
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne

Combine all ingredients in an airtight container, shake to mix well. May be stored up to six months in a cool, dark place.

Next, I rinse the pork roasts in cold water, coat each roast liberally with the BBQ rub mixture, then place it right into my trusty Crock-pot.

I set it on low for about 5 hours then turn up to high for another hour or until it’s just falling apart.

Carefully take the roasts out of the Crock-pot and set them on a cutting board/mat, shred the pork with two forks and place on a sheet pan covered with aluminum foil.

Save the leftover cooking liquid for later. I like to season the pulled pork with salt and pepper, sprinkle with a few Tbsp’s reserved juice and then drizzle with olive oil. Place under a Lo temp oven broiler for apx 5-7 minutes or until you see the ends start to get a little crispy.

Toss thoroughly and serve with your favorite BBQ sauce. I usually serve a freshly made coleslaw on the side as well.

I like to freeze the extra pork for quick meals…which is why I don’t mix the pork with BBQ sauce until serving.
