Hi! Did you all think I’d disappeared?? Yes, it’s been awhile. Life has been pretty crazy at our house but I think we’re finally settling into the spring quarter at school (less hectic classes!), it’s almost May, spring-like weather and a less hectic schedule in general! I’m all for a less hectic schedule! 🙂
My husband has been in Japan (work trip) for the last 10 days. I do appreciate him (I tell him often!!) and ALL he does at home for us…but I now really appreciate him more 🙂 Keeping up with yard-work, trash, recycle, etc etc…on top of my regular “to do’s” and not sleeping soundly when he’s away, has about wiped me out! He came home today (YAY!!) and I’m so looking forward to 1. sleeping better and 2. a nice quiet weekend with lots of family togetherness 🙂
Backtrack to one night last week when it was just my daughter and I at home for the evening. She is a pasta fanatic!! She would eat homemade mac-n-cheese every day if I let her. I try to limit my pasta to only a couple times a month. I thought it’d be nice to sit down to a nice dinner, chat about what’s going on with school, church, friends, life in general 🙂 Don’t get me wrong, we talk all the time and I’m VERY thankful for the relationship we have… I just wanted to make a point to put away cell phones and other distractions and really spend some good quality time together 🙂 So…we decided on Pasta Alfredo with roasted asparagus. I love cooking with my daughter…okay, okay, I also like that she loves to be my clean-up person! 😉
If you’d like to try this recipe for yourself…follow along…
- ½ cup salted butter
- 1-2 garlic clove(s), minced
- 1 8oz. pkg cream cheese
- 1 pint heavy whipping cream
- ¼ teaspoon salt
- ¼ teaspoon pepper (optional)
- 1 teaspoon Trader Joe’s 21 Seasoning Salute (my favorite seasoning mix!!)
- 1½ cups grated Parmesan cheese
- In a medium sauce pan, combine butter, cream cheese, garlic, and heavy cream over medium heat.
- Add salt, pepper and seasonings.
- Bring to a slight boil then reduce heat to medium low and simmer for 8 minutes.
- Remove from heat and slowly add Parmesan cheese.
- Return to stove (low temp) and cook for 2 to 3 minutes, stirring constantly.
Finished sauce! YUM!!
I found this pasta at Costco the other day and it’s become a favorite. This pasta is imported from Italy, is organic and is not enriched! We boiled as per package directions then added the sauce to the drained pasta.
I used my Instant Pot to quickly cook a couple chicken thighs, then I rubbed olive oil and more Trader Joe’s 21 Seasoning Salute on them and broiled them in the oven for about 3-5 minutes on each side. Slice or dice into bite-size pieces and place on top of your plated pasta.
We love asparagus at our house and it was on sale…finally! last week. It’s been SO expensive! Anyway, that’s a great option as a side dish.
Wash the asparagus then break off the ends and place the tops in a baking dish (or aluminum pan as I did here)… drizzle with a lemon or lime olive oil and sprinkle with sea salt. Bake at 375 for approx 10 minutes or til slightly soft but still having a good crunch…watch carefully and don’t overcook! …because who likes soggy asparagus?? 🙁
It may seem like this is alot of work, but it’s really not. If you had an already roasted chicken, this would be a super quick hearty meal. Here’s our finished product… it was really good!
